The House of Brews is a local place where friends gather to enjoy a bite to eat, share great company and to truly experience specialty beers & boutique wines.
From the beer geek breakfast series – the beer that really put Mikkeller on the map – This imperial Oatmeal stout is brewed with one of the world’s most expensive coffees, made from droppings of weasel-like civet cats. The fussy Southeast Asian animal are picky and will eat nothing but the best and ripest coffee berries. Enzymes in their digestive system aid the process of breaking down the beans which brews a strong, fist-in-the-air flavored coffee. Who would’ve thought drinking beer that started its journey travelling through the insides of a weasel, would taste this good?
AN IMPERIAL STOUT BREWED WITH CHOCOLATE “the ancients called it ‘food for the gods’“ The Popol Vuh, the sacred book of the Maya, unfolds a complex web of mystery around a beverage known as xocoatl (ch-co-atle). At Southern Tier, we’re not surprised that hieroglyphs of the ancient Maya depict chocolate being poured for rulers and gods. Moving through centuries, the circular journey of cacao has been realized in our brewing house, encompassing the complexity of the darkest, bitter-sweet candy together with the original frothy cold beverage of the ancient Maya to bring to you our Blackwater Series Choklat Stout. We have combined the finest ingredients to tempt your senses & renew the power & interrelation of history.
“a stout of great contention” We are not the harbingers of truth as some may suggest but it may indeed be argued that our brewing philosophy is tantamount to a dessert with a bellicose past. How, you may ask, would a brewery determine a likeness to hard-coated custard? Our response is simple; it’s all in the power of history, and of course, the extra finesse needed to top off a contentious treat with definition. The British founders of burnt cream and from Spain, crema catalana, both stand by their creative originality and we respect that, but it was the French Crème Brûlée, amid the strife of contention, that survived to represent our deliciously creamy brew.
Brewed with ten varieties of malted barley, this stout is smooth as silk, yet complex and rich in body. Serve this guy at cellar temperature. Put another log on the fire, sit back and enjoy the friendship of this ultimate winter warmer.
This beer will cause your taste buds to be at a standoff. Cocoa mixes with subtle vanilla and cinnamon notes before the chili pepper takes hold with its heat. Now you have a choice to make. Drink this alone or with friends?
Liquid Bliss.....Brewed with peace of mind. Unlock your inner Zen and delve into the Yin and Yang of two decadent flavors. Focus on the harmonic togetherness of chocolate and peanut butter as it takes you to a place that you never thought possible… a “Liquid Bliss.”

A unique irish style cider made with 17 varieties of apples and a similar fermentation style to wine, for a fruity, complex character.
Our Ace Pineapple is another first [thirst] for the California Cider Company. We believe it to be the original pineapple cider made anywhere in the world! We add pineapple juices to our fermented apple base to produce a 5% ABV cider that has a great pineapple nose and a semi-sweet initial taste with a tart finish. It is extremely refreshing and very quaffable for cider, beer, or wine drinkers. It is delicious when consumed ice cold. We got the idea for the cider on one of our many visits to the beautiful and inspiring Hawaiian Islands. It’s the ideal tropical drink especially in hot and humid climates.
This cider is semi-dry and wonderfully effervescent with a remarkably fresh apple nose. Its crisp, fruit forward taste and a clean, refreshing finish, have won our cider countless awards and praise.
Our Traditional Hard Cider blended with a touch of mango for that tropical flavor just in time for the summer’s heat.
Naturally elegant and refreshingly adult with a sweet-sharp blackberry tang and mouthwatering juicy complexity, complemented by a luscious pear-berry bouquet. Naturally fermented using 100% pear juice, not from pear juice concentrate, or flavored hard apple cider. Filtered cold for extra purity, with no added colorants, sugar, sorbate or benzoate preservatives. No added malt, spirit, grape or apple alcohols.
This IPA from Colorado’s First Craft Brewery is anything but traditional. Mojo India Pale Ale was inspired by the English who first shipped their ales to India and the Far East – but brewed with an attitude of the great American West. Pale in color but packed with flavor, Mojo reflects the perfect balance of hop bitterness and malt character. The unique Amarillo hop creates a big, grapefruit-like citrus flavor and aroma, making Mojo a very zesty IPA that's crisp and refreshing.
Renowned for its golden color, distinctive creamy head, smooth body and easy drinking character, Boddingtons is a medium-bodied pale ale. It has a creamy, malty and slightly sweet flavor and features a clean, pleasant aftertaste.
Double Milk Stout "2 varieties of hops & 3 types of malts" Milk stout, also called ‘cream’ or ‘sweet’ stout, is a stout containing lactose, a sugar derived from milk. Because lactose is unfermentable by beer yeast, it adds sweetness and body to the finished beer. Milk stouts have been claimed to be nutritious, and were marketed as such in the early 1900s with claims that would make the FDA wince. One ad read, “Ideal for nursing mothers, for the healthy, for the invalid, and for the worker.” Surely! Of course, we couldn’t stop at a traditional milk stout. Ours is a double, an addition to our 2X line, and at 7.5% abv is every bit as delicious as it sounds. To your health!
Pale ale and crystal malt, chocolate malt, special blend of sugars, Fuggle and Goldings hops, real dark chocolate and chocolate essence. Chocolate malt and real dark chocolate are combined with Young's award winning rich, full flavoured dark beer to craft a satisfyingly indulgent, but never overly sweet experience.
Our sparkling Belgian Style Farmhouse Ale is wine barrel-aged with an abundance of hand-zested orange peel. Spicy white pepper notes contrast the citrus tartness. The light, refreshing, creamy vanilla finish will excite those fond of Champagne. Originally brewed by Belgian farmers to attract the best farm hands, we were inspired to brew an exceptional ale as inviting as the original Belgian Farmhouse ales. Light and effervescent, we named it for our founder’s granddaughter Sofie.
Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish. According to legend, a grateful Countess Matilda founded a monastery where, over centuries, monks have been brewing ale unique in character. While in Belgium, we were inspired by the story and the monks’ beer. We returned to Chicago and brewed our homage – a Belgian Style Pale Ale named Matilda.
A magical, mystical Monkey whose golden soul glows with the wisdom of the ages. This warming, flavored ale is rich in the spirited tradition of Belgian-inspired brewing. The Soothsayer sees in the shadows a glass of black vision, indeed. A dark future that’s all in the making. Tempting good folks to share in the deed. What he sees is the old way of brewing with no spices, no voodoo, no spells. Just the grains and the yeast and the ancient black art. Can’t you feel how it darkly compels? With Soothsayer, we forgo any spicing to explore the art of dark brewing. Simple grains and Ommegang yeast alone portend notes of licorice, coffee and chocolate under a thick tan head.

America's First Trappist Beer Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.
Aged? Many beers have a long maturation, but this one has only 24-36 months in oak barrels. Pale? This beer has an old gold to bronze color, rather than the burgundy more common in the breweries of West Flanders. This is the ‘mother beer,’ used in various quantities to blend with the other Petrus beers, and to give them their unique and very distinctive taste. This mother beer is rather sour with a bite like the best Brut Champagnes. A connoisseur’s delight! The only one of its kind on the U.S. market.
The Apple Tart is 6% ABV and brewed with natural apple juice, cinnamon and nutmeg. Its kettle-soured with lactobacillus, then fermented with our house English yeast strain.
An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree," and its wood has been used in South American wine-making communities.
In honor of the 40th anniversary of the original release of Bitches Brew, Miles Davis' 1970 paradigm-shifting landmark fusion breakthrough, we've created our own Bitches Brew -- a dark beer that's a fusion of three threads of imperial stout and one thread of honey beer with gesho root. It's a gustatory analog to Miles' masterpiece.
Up The Creek is a hoppy behemoth of a beer with its 12.5% ABV well hidden under heavy layers of malt. The hops come through powerfully in the mouth, with rich roasted malt, sweet caramel, and a burst of vinous fruit. The finish is malty sweet and fruity, while the hops dissipate. Use caution or you’ll be Up The Creek!
While most lagers give away most of their taste profile in the front of the mouth, Pilsner Urquell only hints at its flavour there. Instead, it develops you in the middle, followed by a refreshing, clean finish and balanced aftertaste, practically inviting you to have another.
American Style Wheat Wine A smooth full bodied whale of an ale composed of 65% wheat with a boat load of complex flavors like hints of vanilla and licorice. Surprising drinkability for such a big beer because it finishes without lingering and leaves you thirsting for more.
Kentucky Bourbon Barrel Ale. With a little creative curiosity, we used spent bourbon casks, fresh from decanting, and filled them with our very own Kentucky Ale. From barrels that once held the finest bourbons of Kentucky, we present Kentucky Bourbon Barrel Ale, a smooth, golden elixir unlike any other. Subtle yet familiar flavors of vanilla and oak are imparted to this special ale as it rests in the charred barrel. We attribute this to what the bourbon maker calls the “angel’s share”. Elegantly smooth and modestly carbonated, Kentucky Bourbon Barrel Ale is a fine sipping ale with the distinctive nose of a well-crafted Kentucky bourbon.
A tart brown ale aged on cherries. Ommegang Rosetta pays homage to time-honored Belgian methods of aging and blending fruit beers. Ommegang brewmaster Phil Leinhart partnered with Belgian sister brewery, Liefmans - legendary brewers in the world of sour fruit beers - to create a truly unique blend for Ommegang and U.S. craft beer lovers. Pouring a mahogany-brown with a hint of red, Rosetta offers elegance, depth, complexity, and an intriguing interplay of tartness and sweetness. This is derived from Phil's perfectly balanced blend of Oud Bruin (a tart Flemish brown ale) with Cuvee Brut (a fruity and lively Kriek Beer.
St-Louis Premium Framboise is a frambozenbier, or raspberry beer, based on a lambic. St-Louis Premium Framboise contains 25% juice from Willamette raspberries with their pure, natural sugars. It is a thirst-quencher with a low alcohol content. It’s a very fruity beer with a beautiful balance between the sweet taste of the raspberries and the slightly sour taste of the lambic.

It is full bodied and with a smooth yeast taste. To be enjoyed at any time. Brewed according to our centuries-old brewing tradition on the Weihenstephan hill.
So good it’s almost wrong. Dark ruby in color and brewed with seven varieties of imported malts. Complex in finish, with hints of smoke and peat, paired with a malty richness and a right hook of hop power to give it the bad attitude that a beer named Dirty Bastard has to live up to. Ain’t for the wee lads.
A heavy malt foundation includes Crystal malt for sweetness and just enough Midnight Wheat malt to push the color to black. The bitterness is huge, but balanced by malt sweetness. The hop flavors and aromas range from citrus to floral to pine thanks to a delicious blend of hand-selected Chinook and Centennial hops.
We zeroed in on the botanical structure of the hop cone to get to the essence of this beer. When hops are at their peak maturity, their cores swell up with a sticky, golden, resinous substance that is the flavor you crave from an IPA. WIth an IBU of 103 and ABV of 9.1%, Resin can be loosely described as a double IPA — but rarely do Sixpoint beers adhere to any strict style demands.
Once our eyes were opened to the potential of the hop cone, we couldn't be stopped. With a laser focus, we magnified the hop factor, and pushed the boundaries of flavor, aroma, and perception itself to create HI-RES. It's Mad Science. We crafted RESIN as an embodiment of the sticky quintessence of hops… a liquid hymn to beer’s bittering bite.

Where the Mediterranean Sea meets the Atlantic Ocean is the ancient city of Tangier. This confluence has made Tangier a cultural waypoint for millennia. From Greek heroes to Cold War spies and uprisings, Tangier has inspired thousands of legendary stories. It is written that before his battle with the giant Antaeus, Hercules rested in a nearby cave. But where myths end, our tale begins. Tangier is brewed as a Session India Pale Ale with spicy citrus aromas and stone fruit flavors. These flavors, with the addition of lightly roasted malts and brilliant hop bitterness, make Tangier a beverage as refreshing as it is exotic. The approachable 4.6% abv yields more time to enjoy the synergy between the tangerine peel and spicy, citrusy, Azacca hops. Enjoy Tangier in celebration of your epic adventure.

Spruce Tip Ale With a little treat from our friends out West, it’s time to brew a beer with a mountain of spruce tips. As the air gets cooler and the snow starts to fall in places way way way colder than any place us Floridians would ever call home, we do envy the sight of a snow capped mountain… something we will never see in our homeland. So, as a tribute to our frozen friends, we’ve shipped in a big bag of freshly picked spruce tips and are excited to give you Just the Tip.
A Rye IPA with Honey and Oranges. This special beer is only brewed a couple times a year. It is an India pale ale, 7.1% ABV, which is a perfect blend of dryness from the rye malt and citrus from the orange. A combination of hops are used, but it highlights Cascade hops which we put in our hopback, a vessel the beer passes through during the brewing process which allows us to add some additional flavor. It is loaded with Florida oranges (80 pounds are used in the 500 gallon batch). This flavor-packed beer is perfect to enjoy on a sunny Florida afternoon.
We scraped all the hash out of the Yakima hop pelletizers we could get our sticky fingers on to concoct the dankest double IPA out there. The pure hop lupulin, aka “hash” (the resiny stuff), meshes seamlessly with the 2-row, pilsner and wheat malts, allowing it to deliver a pungent punch to the palate.
A river of deep caramel and chocolate malts meandering through undercut currents of hop additions. Georgia Brown is part of our year round lineup.
Our Rod Bender Red is an American style amber ale which is characterized by medium to high malt character and medium to low caramel flavor.
