Kasteel Rouge is a unique blend of Kasteel Donker and a sweet cherry liqueur. This fruity beer makes a great aperitif on a sunny terrace. • Tap 24 - La Trappe Ora et Labora Doppelbock

La Trappe and Brunswick Bierworkshas collaboration. Ora et Labora translates as “Pray and Work”, which is the creed of the Trappist Monks. The beer is a stern 7.5% ABV “New World Double Bock” and was brewed by La Trappe’s brouwmeester Lodewijk Swinkels alongside Brunswick Bierworks master brewer Christian Riemerschmid von der Heide. The collaboration weaves traditional krausen fermentation with a mighty maltbill and a unique blend of Opal, Loral, Mandarina Bavaria and Ontario Newport hops sourced from the Americas and Europe; bridging the two worlds of brewing. The recipe that Lodewijk and Christian have designed is “double bock” in strength. The ingredients and process with re-fermentation is like a wheat double bock – however the fermentation and yeast is like grand cru.

  • Tap 45 - Dogfish Head Lupu-Luau Coconut IPA

A lupulin-loaded, coconut-centric ale. Our Lupu-Luau IPA! The story of Lupu-Luau began when Sam was hanging outside with coworkers during an overly-sunny day. One present coworker in particular was lacking heavily in the melanin department, to put it lightly. A friendly joke about a total tan aversion led to this legendary comment, “You can say it, Sam, I’m pale as f**k.” The brewer in Sam thought that would make a cool name for a super pale beer. From there the wheels started turning and the iterative R&D process began. Sam set out to make a hazy, overly pale, beer but the test batches weren’t quite there yet. However, during that process, he found out how great coconuts work in an IPA and decided that the new goal was to make an IPA using as much coconut as possible. We started with a combination of Pils malt with flaked barley, rolled oats, and malted and raw wheat to get it all hazy. Then we introduced coconuts three ways by adding toasted coconut, dehydrated coconut water and an experimental hop variety that provides a unique coconut & woody aroma.

To see the hop cone up close, we zoomed in microscopic, and found a hi-res view. In Hi-Resolution, the hop optic was magnified; our perception, fully amplified. It’s microscopic. It’s telescopic. It’s off-topic. It’s Mad Science. With massive amounts of late-addition, new-age hops, HI-RES magnifies juicy hop character to the limits of human perception, testing your palate’s ability to comprehend the tiny particles in hops, and the insane flavors they produce.

  • Tap 54 - Green Flash West Coast Double IPA

West Coast IPA As craft beer pioneers, we embarked on an expedition to brew the benchmark West Coast IPA. We ventured into the unknown and struck gold, discovering a tantalizing menagerie of hops. Simcoe for tropical and grapefruit zest, Columbus for hop pungency, Centennial for pine notes, Citra for citrus zest and Cascade for floral aroma are layered throughout the brewing process. West Coast IPA exemplifies the Green Flash spirit of adventure and discovery.

  • Tap 56 - Dogfish Head Burton Baton Oak Aged Imperial IPA

This oak-aged hybrid has been gaining popularity over the past few years and is now available year-round. For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fermenting the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!
