Beer on Tap

  • Tap 01 - Southern Tier Creme Brulee Imperial Stout

“a stout of great contention” We are not the harbingers of truth as some may suggest but it may indeed be argued that our brewing philosophy is tantamount to a dessert with a bellicose past. How, you may ask, would a brewery determine a likeness to hard-coated custard? Our response is simple; it’s all in the power of history, and of course, the extra finesse needed to top off a contentious treat with definition. The British founders of burnt cream and from Spain, crema catalana, both stand by their creative originality and we respect that, but it was the French Crème Brûlée, amid the strife of contention, that survived to represent our deliciously creamy brew.

  • Tap 05 - Stone Americano Imperial Stout with Espresso

A decidedly American imperial stout with espresso. The coffee notes in Stone Americano Stout are bold, rich and full of American swagger. For each 120-barrel batch, we incorporated over 250 lbs. of artisanal espresso-roast beans into the mash and added in Columbus, Chinook, Amarillo and Cascade hops to invigorate the coffee taste with a slight citrus and resin hop presence. When it came time to selecting our coffee, we chose the same local roasters who contributed to our sought-after 2013 Stone ESPRESSO Imperial Russian Stout. Their fantastic beans helped us achieve this dark, hoppy and wonderfully aromatic espresso stout.

It is extremely refreshing and very quaffable for cider, beer, or wine drinkers. It is delicious when consumed ice cold. We got the idea for the cider on one of our many visits to the beautiful and inspiring Hawaiian Islands. It’s the ideal tropical drink especially in hot and humid climates.

Tap 14 - NITRO - Ballast Point Sculpin IPA

An interesting NITRO push to our trophy beer! A trophy beer that’s a testament to our homebrew roots. Our Sculpin IPA is a great example of what got us into brewing in the first place. After years of experimenting, we knew hopping an ale at five separate stages would produce something special. The result ended up being this gold-medal winning IPA, whose inspired use of hops creates hints of apricot, peach, mango and lemon flavors, but still packs a bit of a sting, just like a Sculpin fish.

    Tap 16 - NITRO - Southern Tier 2xSTOUT

Double Milk Stout "2 varieties of hops & 3 types of malts" Milk stout, also called ‘cream’ or ‘sweet’ stout, is a stout containing lactose, a sugar derived from milk. Because lactose is unfermentable by beer yeast, it adds sweetness and body to the finished beer. Milk stouts have been claimed to be nutritious, and were marketed as such in the early 1900s with claims that would make the FDA wince. One ad read, “Ideal for nursing mothers, for the healthy, for the invalid, and for the worker.” Surely! Of course, we couldn’t stop at a traditional milk stout. Ours is a double, an addition to our 2X line, and at 7.5% abv is every bit as delicious as it sounds. To your health!

Our sparkling Belgian Style Farmhouse Ale is wine barrel-aged with an abundance of hand-zested orange peel. Spicy white pepper notes contrast the citrus tartness. The light, refreshing, creamy vanilla finish will excite those fond of Champagne. Originally brewed by Belgian farmers to attract the best farm hands, we were inspired to brew an exceptional ale as inviting as the original Belgian Farmhouse ales. Light and effervescent, we named it for our founder’s granddaughter Sofie.

  • Tap 18 - Goose Island Matilda Belgian Pale Ale

Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish. According to legend, a grateful Countess Matilda founded a monastery where, over centuries, monks have been brewing ale unique in character. While in Belgium, we were inspired by the story and the monks’ beer. We returned to Chicago and brewed our homage – a Belgian Style Pale Ale named Matilda.

  • Tap 19 - Spencer Trappist Ale

America's First Trappist Beer Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

"This Golden Belgian Style Ale matured for over a year on brett in Cabernet and Merlot barrels, then was blended with a bright, citrusy hop-forward Belgian Style IPA. Four plus two equals seven here, as the finished product is bigger than the sum of its parts. The art of this crafted cuvee is in the hop profile with a Belgian style nose up front, followed by woody undertones and a complex finish. After 19 years we’re still all about brewing great beer, supporting the communities who drink it and having a kick ass time along the way."

The particular character and the unique taste of "Delirium Tremens" result from the use of three different kinds of yeast. Feels like the sound shot of alcohol is igniting the mouth. In reality the tongue and palate are warmed. The taste is characterized by its roundness. The aftertaste is strong, long-lasting and dry bitter.

Grand Cru by RODENBACH has on average been left for much longer in the oak casks (“foeders”) of the Roeselare “beer cathedral”, which results in a more pronounced version of the “Flanders Red-Brown Beer” style. RODENBACH Grand Cru consists of 1/3 young beer and 2/3 beer matured two years in oak. The result is a complex beer with a great deal of wood and esters, vinous and with a very long aftertaste, just like a Grand Cru wine.

  • Tap 23 - Petrus Aged Sour Pale Ale

Aged? Many beers have a long maturation, but this one has only 24-36 months in oak barrels. Pale? This beer has an old gold to bronze color, rather than the burgundy more common in the breweries of West Flanders. This is the ‘mother beer,’ used in various quantities to blend with the other Petrus beers, and to give them their unique and very distinctive taste. This mother beer is rather sour with a bite like the best Brut Champagnes. A connoisseur’s delight! The only one of its kind on the U.S. market.

Up The Creek is a hoppy behemoth of a beer with its 12.5% ABV well hidden under heavy layers of malt. The hops come through powerfully in the mouth, with rich roasted malt, sweet caramel, and a burst of vinous fruit. The finish is malty sweet and fruity, while the hops dissipate. Use caution or you’ll be Up The Creek!

  • Tap 25 - Dogfish Head Burton Baton Oak Aged Imperial IPA

This oak-aged hybrid has been gaining popularity over the past few years and is now available year-round. For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fermenting the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!

Seven Hells! Seven Kingdoms Hoppy Wheat Ale, the newest beer in the Game of Thrones series. Seven Kingdoms is a marriage of a traditional Belgian-style wheat and a hop-forward American ale – but unlike so many of the marriages on the show, the resulting hoppy wheat is pleasant, playful and inspired. Seven Kingdoms harmoniously weds citrusy and herbal American hops, with wheaty maltiness and moderate bitterness.

This is our firstborn brew, whose accidental discovery started our story in 2003. Kentucky Bourbon Barrel Ale. With a little creative curiosity, we used spent bourbon casks, fresh from decanting, and filled them with our very own Kentucky Ale. From barrels that once held the finest bourbons of Kentucky, we present Kentucky Bourbon Barrel Ale, a smooth, golden elixir unlike any other. Subtle yet familiar flavors of vanilla and oak are imparted to this special ale as it rests in the charred barrel. We attribute this to what the bourbon maker calls the “angel’s share”. Elegantly smooth and modestly carbonated, Kentucky Bourbon Barrel Ale is a fine sipping ale with the distinctive nose of a well-crafted Kentucky bourbon.

Kasteel Rouge is a unique blend of Kasteel Donker and a sweet cherry liqueur. This fruity beer makes a great aperitif on a sunny terrace. It’s certainly a beer for lovers of sweet cherries with an overpowering aroma of the fruit. The cherries get the better of the malt in the Kasteel Donker mother beer, although it contributes touches of chocolate and pepper to remind you it’s there. It is surprisingly easily digestible for quite a strong beer.

  • Tap 38 - Southampton Double White

This is a truly special brew and a Southampton original. It is a “double strength” or “double gravity” version of a classic Belgian-style white ale. White Ales (or Witbiers) are called white because their light color and cloudy appearance make them appear almost white. They are unfiltered wheat-based brews with a unique citrus and spice character that comes from the use of orange peel and ground coriander seed in the brewing process. Southampton Double White honors the original Belgian white ale style, but it has a little more of everything— more complex orangey/citrusy fruitiness, a slightly fuller body, more alcohol and a more satisfying finish. It’s delicate, balanced and every bit as refreshing as the original style, but more intense.

You're not worthy This is an aggressive beer. You probably won’t like it. It is quite doubtful that you have the taste or sophistication to be able to appreciate an ale of this quality and depth. We would suggest that you stick to safer and more familiar territory—may something with a multimillion-dollar ad campaign aimed at convincing you it’s made in a little brewery, or one that implies that their tasteless fizzy yellow beer will give you more sex appeal. Perhaps you think multimillion-dollar ad campaigns make a beer taste better. Perhaps you’re mouthing your words as you read this.

Tap 42 - Funky Buddha More Moro Blood Orange IPA

More Moro Blood Orange IPA is back! We ceremoniously slaughtered heaps of crimson-fleshed “Moro” fruit to retrieve its delicious ichor, and then blended it with caramel malts and grapefruity hops to produce the sticky, citrus blast that we crave. Oranges: you’re on notice. (A Moro, by the way, is an American varietal of blood orange that has deep, crimson red flesh and an intense citrus flavor. Expect an overload of ripe, fresh citrus on the nose. The flavor is deeply citrusy and fruity, with notes of pineapple and tangerine. A sticky, caramel-laden malt body compliments the fleshy fruit, followed by a long, grapefruit-inflected hop finish. We suggest you drink it fresh.)

The Calling is the result of several months of hard (delicious) work by our brewing team who sought to create an IPA with a juicy, tropical fruit aroma that leaps from the glass. A simple malt base composed solely of our two row base malt serves as a platform for giant, punchy hop flavor and aroma provided by a blend of Simcoe, Bravo, Topaz, Cascade, Mosaic, Equinox, Galaxy, and Amarillo hops. Read that sentence again. We are not messing around here, folks. The Calling also receives an addition of lemon peel during the last five minutes of the boil to add an extra citrusy punch. At 8.5 ABV and 75 IBU, The Calling is the IPA we knew we had to brew.

Our Caramel Cream Ale was developed to showcase the wonderful caramel notes in dark crystal malts. In addition to the malt complexity and creamy mouthfeel, this beer finishes with a hint of vanilla. There are no substitutes for this very special American Ale. Interesting Fact: The unforgettable flavor of this beer is the result of 100′s of test brews to refine the recipe and method. Head brewer and brewery owner, Mike Halker, brewed this beer for his wife Jodi who, for 2 years, kept saying “almost” until he worked his magic and made it the beer it is today.

Made with twice as much real orange blossom honey, all-natural ingredients and no refined sugar, it really is the new king bee of beers.

Join us as we have to priviledge to tap Founders Brewing Company KBS. This keg will not last long so be here or well...miss out! We will be tapping other Founders Backstage Releases as well, including: Mango Magnifico con Calor & Project PAM. KBS: What we’ve got here is an imperial stout brewed with a massive amount of coffee and chocolates, then cave-aged in oak bourbon barrels for an entire year to make sure wonderful bourbon undertones come through in the finish. Makes your taste buds squeal with delight. ABV: 12.4% IBUs: 70 RateBeer Rating: 100 Mango Magnifico con Calor: Mango Magnifico is a high-gravity fruit beer brewed with mango and a touch of habaneros to add just the right amount of heat. The delicate flavors imparted by the sweet richness of the mango are punctuated perfectly by the subtle heat of the habaneros, proving that fruit beers do not have to be one-note. This 10% ABV ale is both sophisticated and refreshing, making it the perfect beer to share… or to keep all to yourself. Project PAM: Venture into the shadows of our brewers’ minds and discover their mad genius. From this unknown emerges Project PAM. In development for years under a shroud of secrecy, this Black IPA is brewed with a cornucopia of hops then aged in maple syrup bourbon barrels to add complex oaky bourbon notes and the sweetness of maple syrup to keep the bitterness in check. Like its creator, the origins of its name will forever remain a mystery. Project PAM clocks in at 10.8% ABV. Unfortunatly, no growler fills.
