Horchata is based on the classic aguas frescas drink that is usually served in Mexican bodegas. The traditional storage vessel is heavy, ribbed glass jar filled with ice. The drink is ladled into glasses and served to thirsty patrons. This beer has a tapioca sweetness due to the use of rice and lactose (a non-fermentable milk sugar that adds body and sweetness). It also has moderate vanilla and cinnamon notes as is typical of the Mexican interpretation of horchata.

America's First Trappist Beer Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

It is brewed in honor of the intrepid European explorers who believed they had reached the “end of the world” when they discovered North America ‘the new world’. This triple-style golden ale recreates the style of beer originally developed in the Middle Ages by trappist monks for special occasions and as such it was the first of its kind to be brewed in North America.

Maudite has a typically Quebecois name that is reminiscent of the legend of the Chasse-Galerie (the legend of the Flying Canoe). Legend has it that a group of lumberjacks struck a deal with the devil to fly home in their canoes, guided by Satan himself, to make it home in time for Christmas.

  • Tap 25 - Dogfish Head Burton Baton IPA

For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fermenting the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!

Tap 53 - Orange Blossom Pilsner Squared (OBP 2)

When you make a pot of coffee, but only use half the water, you get some pretty rich coffee. That’s the approach we took with our latest offering. OBP Squared, with half the water, has 11% alcohol by volume - twice that of original OBP. The result is a bold, distinct taste of its own. Made with twice as much real orange blossom honey, all-natural ingredients and no refined sugar, it really is the new king bee of beers.

Yom Kippur Observance at The House of Brews

    9/23/2015 2:00:00 PM - 24 days from now
We will be Closed in Observance of Yom Kippur. Yom Kippur is the holiest day of the year—the day on which we are closest to G‑d and to the quintessence of our own souls. It is the Day of Atonement—“For on this day He will forgive you, to purify you, that you be cleansed from all your sins before G‑d” (Leviticus 16:30). For nearly twenty-six hours—from several minutes before sunset on 9 Tishrei to after nightfall on 10 Tishrei—we “afflict our souls”: we abstain from food and drink, do not wash or anoint our bodies, do not wear leather footwear, and abstain from marital relations.
  • Rosh Hashanah Observance at The House of Brews

Rosh Hashanah Observance at The House of Brews

    9/14/2015 2:00:00 PM - 15 days from now
We will be Closed in Observance of Rosh Hashanah. The festival of Rosh Hashanah—the name means “Head of the Year”—is observed for two days beginning on 1 Tishrei, the first day of the Jewish year. It is the anniversary of the creation of Adam and Eve, the first man and woman, and their first actions toward the realization of mankind’s role in G‑d’s world. Rosh Hashanah thus emphasizes the special relationship between G‑d and humanity: our dependence upon G‑d as our creator and sustainer, and G‑d’s dependence upon us as the ones who make His presence known and felt in His world. Each year on Rosh Hashanah, “all inhabitants of the world pass before G‑d like a flock of sheep,” and it is decreed in the heavenly court “who shall live, and who shall die . . . who shall be impoverished, and who shall be enriched; who shall fall and who shall rise.” But this is also the day we proclaim G‑d King of the Universe. The Kabbalists teach that the continued existence of the universe is dependent upon the renewal of the divine desire for a world when we accept G‑d’s kingship each year on Rosh Hashanah. The central observance of Rosh Hashanah is the sounding of the shofar, the ram’s horn, which also represents the trumpet blast of a people’s coronation of their king. The cry of the shofar is also a call to repentance, for Rosh Hashanah is also the anniversary of man’s first sin and his repentance thereof, and serves as the first of the “Ten Days of Repentance” which culminate in Yom Kippur, the Day of Atonement. Another significance of the shofar is to recall the Binding of Isaac which also occurred on Rosh Hashanah, in which a ram took Isaac’s place as an offering to G‑d; we evoke Abraham’s readiness to sacrifice his son, and plead that the merit of his deed should stand by us as we pray for a year of life, health and prosperity. Altogether, we listen to one hundred shofar blasts over the course of the Rosh Hashanah services. Additional Rosh Hashanah observances include: a) Eating a piece of apple dipped in honey, to symbolize our desire for a sweet year, and other special foods symbolic of the new year’s blessings. b) Blessing one another with the words “Leshanah tovah tikateiv veteichateim,” “May you be inscribed and sealed for a good year.” c) Tashlich, a special prayer said near a body of water (an ocean, river, pond, etc.), in evocation of the verse, “And You shall cast their sins into the depths of the sea.” And as with every major Jewish holiday, after candlelighting and prayers we recite kiddush and make a blessing on the challah.
